Being a small farm North of Edmonton, there are many steps involved in providing cut pieces of chicken for your family. From the hatchery that hatches our eggs, to daily care for our birds with hand-made feed that is soya and corn free, to the grass that is the steward for amazing grass-finished flavor and nutrients, and then finally to the small processor who carefully processes and packages the final product. Collectively, we are sharing knowledge that helps answer the questions of what defines a “Local Food System.”
Each time we process a bird to offer chicken breasts, we need a matching purchase of the other parts of the bird as well. For every 12 chickens we cut for breasts there are 3 packages of 8 drums, thighs and wings to sell. We do packs of 8 to cut down on processing expenses, which our butcher passes on to us. If you would like packages of 4, let us know and we will get some made this upcoming season. We are always striving to balance what works for your family, and what we can do to keep our products affordable!

Chicken Dark Meat Drum and Wing and Thigh
All of our free-range meat products should be cooked with low, moist heat. Mandy recommends 325F.
Our birds are not rushed to gain weight. They are raised in 90-110 days, giving a different product than the grocery store or large direct-to-consumer farms. We also do not put additives in our finished chicken cuts that help retain moisture or add unwanted sodium. Our birds thrive outdoors with lots of space and the ability to forage. More exercise adds more flavour to the meat, and low, slow, moist heat brings out the best flavour and texture.
Our hogs are raised outside over 8 months in straw bale houses in the winter and acres of grass in the summer. They are allowed to root, explore and be social which keeps them happy. Again, we recommend low, moist heat for the best result.
